You can freeze these well, just add the garlic butter after the freezer!

I have the book, and I have used the pizza dough recipe to make delicious bread sticks, and garlic knots and they all turn out great! This recipe is essentially the same, except using honey instead of sugar! I have not substituted honey for sugar in my bread making, but it makes me curious what the difference of those 2 tastes like when it's finished or feels like when it's being made/ kneaded

You can substitute honey in baking by adding 3/4 cup honey for every cup of sugar it calls for. I like to do this in a lot of my recipes to reduce our sugar intake. I don't notice a large difference in taste but it does add more moisture so be mindful of that!

I’m confused, 2-2 1/2 is that 2 to 2 1/2 or 5 cups total? I feel dumb even asking because I think I know, but the 2 1/2 cups flour didn’t seem like nearly enough to get 12 sticks out of, and 5 cups isn’t good with the amount of water I used.

Don’t feel dumb! It is 2-2 1/2 total. It is a range because sometimes more needs kneaded in and with breads you should always go by feel!
