I made a double batch today for Easter. They had a great flavor but they weren’t as fluffy as I’d hoped. Do you have any suggestions?

Fluffiness would probably be a rising issue. Not letting them rise long enough would make them more dense.

I let the dough rise for over an hour and double the first rise. The second rise was also an hour. Any advice as to how I can know when they’ve fully risen?

Doubling the first rise is a good sign. The 2nd rise you want them to be puffy. Overproofing can also make them go flat and be more dense. Was your dough pretty smooth or sticky or tough?

Is 40g of butter correct? 1/4 cup butter is normally more than that

I accidentally made mine into 13 rolls instead of 15 so they were pretty large but SO fluffy and delicious!
