If I have a dough that is going to sit over night, do I just leave it on the counter or do I need to put it in the fridge?

You would want to put it in the fridge. If not, it would likely over ferment overnight.

When I take it out of the fridge is there a certain amount of time it needs to sit before I cook with it?

I like to just let mine come to room temperature before baking.

If I let it rise overnight, should I shape it onto the pan in the morning and stick it in the fridge until I want to cook it in the evening?
