if i use instant yeast do i need to add all that extra water?

The water content would not change if you use instant yeast.

Due to limited bowl size; I reduced the recipe to make 2 loaves. DELICIOUS!!! Will bake again!

The house smells so good. The bread is absolutely delicious with butter and honey. Love baking in a batch and freezing some!!
